Vanessa Gianfrancesco

Chef and instructor Vanessa Gianfrancesco has been cooking with her grandparents in Italy since she was two years old. Born and raised in Montreal by her Northern Italian father and Southern Italian mother, Vanessa believes Italian cooking is all about sharing, family and togetherness. A passion for food led her to leave law school and pursue a culinary career. She’s a graduate of Montreal’s Culinary Institute, teaches a pasta-making class – and recently launched a website Cooking with V, dedicated to her mother and grandmothers, who taught her all there is to know about food. Her Sunday night go-to dinner is pizza, baked in her family’s backyard wood-burning oven.

Photo of Veal Ragu with Papardelle

Veal Ragu with Papardelle
This classic dish takes a relatively tough cut of meat and turns it into melt-in-your-mouth delicious with a complex flavour that comes from hours of braising and perfumed with coriander and fennel.

Risotto with Peas
What can we say about risotto? It is a classic comfort food made rich and creamy by the starchy Arborio (please, no other rice will do) shocked by a cold white wine then repeatedly sopped in chicken stock, kissed by salty sweet pancetta bacon and slathered in parmesan cheese.

Veal Stuffed Olives
Go figure the Italians found yet another thing to do with olives. Stuffed no less! Then breaded and deep fried! Who knew you could pack so much flavor into one little olive.

Italian Orecchiette with Sausage and Leeks

Orecchiette with sausage and leeks
Orecchetti means “small ear” and is the perfect little cup for holding the sweet gravy-like sauce that comes from cooking sweet Italian sausage with gentle leeks and tangy shallots then finished with parmesan, cream and Dijon mustard.
